The first rule of a good adventure: never stick to the original plan. The second rule of a good adventure: bad decisions make good stories. There's no third rule for a good adventure. Or rather it sounds like: do whatever the hell you want if it makes you happy.
Everything went wrong during those 4 days. But looking back, I can say with certainty: yes it was fun. And no, I would never do it again.
If you still decide to follow the routes or do something similar (please reconsider), I wanted to leave a few learnings:
1. The climbs in the area are very, very steep. Gravel climbs are even steeper and very technical. You'll need big tires, small chainring and a large cassette. And strong legs. Or hiking shoes.
2. It was not so easy to find water and food in the mountains. Most of the restaurants in the small towns were closed. Bring extra water. At one point we were so desperate for food that we called a closed restaurant from google maps and a lady opened it especially for us and cooked dinner. It was unexpectedly great.
3. Do not blindly rely on komoot's routing. Double check the route for potentially difficult sections. And if you are on the road and see an impassable path—stop and try to find a detour, until it's too late and you're stuck.
4. Keep your lights charged. You never know how many hours you'll spend in complete darkness.
5. The people are great. Friendly and open. Ask for help and they will help you.
